Easy Red Velvet Cookies

This is an easy and yummy treat to make for your Valentines! It is quick and easy using red velvet cake mix and white chocolate chips. Enjoy!

INGREDIENTS

1. 1 (16.5 oz) box red velvet cake mix
2. 1/3 cup vegetable oil
3. 2 eggs
4. 1 cup white chocolate chips

INSTRUCTIONS 

1. Preheat oven to 350°F. Line two large baking sheets with parchment paper or silicone baking mats and set aside.
2. In a large mixing bowl, add the cake mix, oil, and eggs. Mix until combined.
3. Add in the white chocolate chips and fold in until well distributed.
4. Scoop balls of dough onto the prepared baking sheets. Note, dough is slightly stickier than regular cookie dough since using cake mix.
5. Bake at 350°F for 10 to 12 minutes or until the tops of the cookies are set.
6. Remove from the oven and cool on baking rack. I transfer parchment paper straight to rack with cookies on top.
