Wellness Wednesday: My Favorite Healthy Lunch Recipes

Hi, friends- Happy Wednesday! I wanted to share some of my favorite healthy lunch recipes today! I get lots of questions about what I eat and people looking for new lunch inspiration.

Lots of my lunches are just different items added together in varies ways without a specific recipes but I will try to break it all down for you guys! I will also list my favorite dressing I will talk a lot about in the recipes, my favorite homemade salsas and how I make my buffalo chicken.

Fresh Steamed Broccoli Bowl:

Fresh Steamed Broccoli topped with ground turkey (I make a batch for the week), Buffalo Sauce, Ranch and Light Feta Cheese

Buffalo Chicken Bowl:

Sautéed Sweet Potato, Steamed Broccoli, Grilled Chicken, Yogurt Ranch, Buffalo Sauce, Avocado, and Everything but the Bagel Seasoning.

Easy & Spicy Jalapeño Chicken Soup:

Ingredients: 3 chicken breasts, 2 cans white beans rinsed and drained, 4 jalapeños, bunch of cilantro, 7-8 cups of chicken broth, avocado for toppings.

Add 1-2 jalapeños (sliced in half), chicken broth, and chicken breasts, chopped cilantro into a large pot and put a lid on the pot. Turn the heat to medium to low and let simmer for 60 mins.

Remove chicken from broth and shred with fords – return to chicken to broth. Add in beans, and more chopped cilantro (as much as you like).

Bring the soup to a simmer and serve hot with lots of fresh jalapeños slices, a sprinkle of fresh cilantro, lime wedge and avocados. You can add sour cream too.

Kale Bowl:

Sauté 4 cups of Kale in olive oil and onions (can be whatever you prefer), salt and pepper, add protein (usually ground turkey), top with avocados, salsa or buffalo sauce.

Buffalo Chicken Wraps:

Start with Mama Lupe’s Low Carb Fresh Tortillas add in your Crockpot Buffalo Chicken, feta, shredded lettuce, avocado and top with extra hot sauce and ranch.

Cauliflower Rice Bowl:

Cauliflower rice, peppers, chopped jalapeños, shredded (precooked chicken), sautéed in avocado oil and top with jalapeño sauce (Trader Joe’s) and Salsa.

Taco Salad:

2 cups of kale (massage with olive oil, lime juice, salt and lime zest), 1/2-1 cup of chopped purple cabbage. Add your protein of choice (I like ground turkey with taco seasoning) cilantro salad dressing (Trader Joe’s) and Everything but the Elote (Trader Joe’s).

Favorite Sauces

Cookies Wings “N” Things Buffalo Sauce, Bolthouse Farms Classic Ranch Yogurt Dressings, Liquid Aminos (in place of soy sauce), Bolthhouse Avocado Green Goddess Yogurt Dressing

Slow Cooked Buffalo Chicken

4 chicken breasts, 1 packet ranch seasoning, 1 jar of buffalo sauce. Slow cook for 4 hours and then shred with a fork.

Favorite Homemaid Salsas

Avocado Salsa: 2 avocados, sliced cherry tomatoes, roasted corn (Trader Joes), Cilantro, Lime Juice and Salt

Corn Salsa: 3 ears of corn on the cob (cooked and cut off ear), 1/4 cup chopped fresh jalapeños, 1/4 cup chopped cilantro, lime juice, and garlic salt.
