Sharing a family favorite recipe today! My mother in law introduced this recipe to me and it’s now a staple side dish & snack that everyone in our family loves. It’s super refreshing & full of flavor and a bonus that it is so simple to make.
1/3 cup White Vinegar
1 TBSP Salt
2 TBSP Sugar (not Truvia)
3 Cucumbers sliced (can remove skin if you wish, but you don’t have to)
1 Onion, sliced (yellow, sweet or white – your preference!)
Dill Weed to preference
Mix everything together & refrigerate for a couple of hours for best flavor. It makes its own juice that can be used for a second batch of cucumbers within the same week.

Does this recipe call for English cucumbers (the big ones) or the small ones?
I use the big ones!

Oops, you’re right! I slice up & add 1 onion (whatever kind I have on hand- white, sweet or yellow).
Why not Truvia/Stevia in the cucumber salad?
Since truvia/stevia doesn’t dissolve the same way as sugar, the consistency would be different. It would also change the taste a little bit, bc the sweetness is a little different. You can definitely try it though, but I think it will taste different!
