Hi Guys! Since Cinco de Mayo is this weekend, I wanted to share some quick and healthy Mexican themed appetizers: guacamole and fresh pico salsa, along with a skinny twist on the ever so popular yummy margarita. Mexican food is one of my favorite things to make at home so this was a no brainer for me!
Let’s start with the guacamole. You will need the following:
2 roma tomatoes
juice of 1 lime
Mash the avocados with a fork or if you have a Molcajete that works wonders. You can find one here. Chop the jalapeños, cilantro and tomatoes and add to the mashed avocados along with lime juice and garlic salt.
Next for the fresh salsa, my favorite is pico de gallo. Very easy and similar to the ingredients of guacamole which makes it easier when making both at the same time. For the ingredients you will need:
5-6 roma tomatoes
4-5 green onions
juice of a lime
Chop all ingredients and mix together, add juice of a lime and garlic salt.
Last, but certainly not least is the Skinny Mango Margarita. I love margaritas and this was the first time I tried making the Skinny Mango Version and it turned out so good! What you will need:
2 shots of tequila
2 cup of ice
2 cup of frozen (organic) mangos
1 1/2 cup of water
juice of 4 limes (be generous with the lime juice)
salt (or sugar) for rim
(this makes only 2 servings so adjust measurements if needed)
This is so easy peasy, just add the ice, tequila, mangos, water and lime juice and blend together. Take your serving glass and run a lime around the rim then dip in salt or sugar. Add your blended skinny mango margarita and there ya have it! I will be making these babies year round. So fresh and guilt free!
