You can have your cake and eat it too! Without feeling guilty! My sister in law, Morgan, shared this awesome healthy cake recipe with me and I love it! It’s super easy to make and you cannot taste that it’s healthy! It tastes just like the real Betty Crocker moist cakes we all love! My husband even loves this and he is not found of healthy desserts!
All you need is 2 ingredients. Just the pumpkin (15oz can) and the cake mix. You can pick any flavor too! Our favorites are chocolate and spice cake.
All you do is mix the puumpkin and cake mix together by hand or by mixer and add to a baking pan. The baking pan can be a (1) bread pan, (3) mini bread pans, a muffin pan. I prefer the mini loaf pans.
I was a my parents over the weekend and made this one in the larger bread pan.
End result, see below. I did end up adding a healthy frosting, since I was making for my parents. The frosting was very easy. Just two ingredients, peanut butter and powdered sugar. All you have to do is heat the pb up in the microwave and add the powdered sugar. I used about a 1/2 cup of pb and a 1/4 a cup of powdered sugar. Other options for frosting is cool whip, or just sprinkle powdered sugar on top.
