As promised, today I am sharing my yummy skinny cocktail recipes from this past weekend. What I love about these recipes, is that they taste just like a blended fruity drink, minus all the bad sugars and calories- plus they really easy to make! The most important ingredient (aside from the alcohol) is the fresh fruit and all the fruit that you will need is in season right now. Woohoo!
The first recipe is the Skinny Kiwi-Strawberry Blended Cocktail. For this you will need:
2-3 shots-Bacardi Rum (depending on how strong you want it)
1 cup Strawberries
1 cup Water
1 cup of ice
2 packets Truvia
Double the recipe if you want to make a larger batch.
Add all ingredients into blender and blend until smooth. I used the Margaritaville blender, but any blender will work. You may need a tad more bit water or alcohol if it is too thick.
Note: Beforehand make sure to freeze your glasses you are serving them in. Takes about 30 minutes to get the frost and it adds a nice touch.
Pour and garnish with a strawberry.

I made another version of this recipe later in the evening after we ran out of kiwis. Just replace the kiwis with the juice of two fresh lemons and you have yourself a Strawberry Lemonade Frozen Blended Cocktail!
Next up, I have the Peach Blueberry Icer. What you will need for this recipe is:
2-3 shots of Vodka
3-4 small (peeled) Peaches
3/4 c of Blueberries
3/4 c Soda Water
1 c ice
2 packets of Truvia
Add all ingredients to a blender and blend until smooth. Add into your frosty serving glasses and done! You have yourself one refreshing, delicious, and healthy cocktail.
This one was Michael’s and my favorite!
