Healthy Spaghetti Squash Bake

This healthy bake is such an easy way to sneak vegetables into a delicious meal for the whole family! It’s yummy, cheesy and the perfect warm dish for a cold winter day. You can easily customize it to please whoever is eating around your table!

Ingredients

  • olive oil
  • salt + pepper
  • 1 spaghetti squash
  • 1 small yellow onion – chopped
  • 1/3 cup chopped carrots
  • 1 tbsp minced garlic
  • 1lb ground turkey
  • 1 tbsp Italian seasoning
  • 1 cup chopped fresh spinach
  • 1 jar marinara sauce
  • 1 cup mozzarella cheese

Instructions

  1. Prepare and bake spaghetti squash. Cut squash in half and scoop out seeds. Brush inside with olive oil. Generously salt + pepper. Place skin up/inside down on foil lined baking sheet. Bake at 400 degrees for about 25 minutes or until soft.
  2. Sauté chopped onion, carrots, and garlic in olive oil until onions appear translucent.
  3. Add ground turkey and Italian seasoning to pan and continue to sauté until turkey is browned.
  4. Add chopped spinach to pan and stir until well mixed. Turn off heat and cover with lid. This will steam and soften spinach.
  5. Once spaghetti squash has baked and cooled, scoop out squash from shell. I do like to cut squash while still in shell into smaller pieces.
  6. Add squash to pan and mix in marinara sauce. Stir well.
  7. Top with mozzarella cheese.
  8. Bake uncovered at 350 for 20 minutes.

Tips

  1. This recipe is highly customizable and easy to tweak to your taste!
  2. Serve with parmesan or extra mozzarella
  3. I use my Always Pan – can use this one pan for sautéing AND baking!
